This… This is why I love Milwaukee summers. Isn’t the weather this week perfect?? Sunny, warm days and cool nights ideal for sleeping with the windows open are my favorite.
If you are looking for something else that’s pretty cool, try these sweet and sour fresh fruit popsicles. I was inspired by a recipe I found on the Food Network to create these pops when I was looking for a way to use up fresh blueberries. Instead of using strawberries like the original recipe, I used raspberries to give these pops more pucker. I also amped up the honey to make sure we didn’t get too tangy. This is a great snack to make with your kids. Alternatively, you could skip the sticks and use the cubes to give a cocktail or cup of club soda a little pizazz. The pops come together quickly. This recipe makes 24 cubes.
Sweet and Sour Popsicles
Ingredients
- 2 pints fresh raspberries
- 1/4 cup orange juice
- 1/4 cup honey
- 1 cup blueberries
Instructions
In a blender, puree raspberries, orange juice and honey until smooth. Pour the mixture into two ice cube trays. Place a few blueberries into each cube.
Freeze for one hour. Insert Popsicle stick and freeze for another 4 to 5 hours until firm.
Use a knife to remove pops and serve.
