27 May Recipe for Sicilian Pork Chops
Good old homemade comfort food. That’s what these pork chops are. It’s an easy family recipe that’s quick to prepare and seriously tasty. I’ll admit, I put a little southern spin on it with smoked gouda mac and cheese on the side, but this is some traditional Sicilian cuisine that you’re going to love. Tall Guy’s Sicilian Pork Chops serves 4
3 tbsp. milk
1.5 c. bread crumbs (I used garlic bagel bites and threw them into the food processor)
1/2 c. shredded parmesan cheese
2 tbsp. fresh chopped parsley
salt & pepper to taste
2 tbsp. olive oil
4 regular pork chops or 8 thin cut pork chops
Preheat the oven to 425°. Whisk together the eggs and milk in a bowl large enough to fit one of the pork chops in. Mix together the bread crumbs, parsley, parmesan, salt and pepper in another bowl large enough to fit one of the pork chops in.
Put 2 tbsp. olive oil in an oven proof pan large enough to fit all of the pork chops in. Heat the oil in the pan over medium heat on the stovetop.
Dip each pork chop in the egg mixture, then coat with the bread crumb mixture. Place in the heated pan and cook for about 5 minutes on each side.
Put the entire pan into the oven for 20 minutes after the chops have browned on the stove top.
Simple sides seem to work really well with this tasty dish – I made mac & cheese with smoked gouda cheese spread, milk, salt and pepper, and blanched some green beans in boiling water for about 5 minutes. The whole meal only takes about 30 minutes to prepare – another great weeknight dinner for the family!
