Okay guys – here’s a quick and easy dinner based once again, on my Bourbon BBQ Pulled Pork recipe! This one is actually really healthy, quick and simple to prepare. You’re gonna love it, I promise.
Recipe for Pulled Pork Sweet Potato
I made this as a one-serving dinner from what I had in the fridge. What you’ll need:
1 sweet potato
1 tbsp. olive oil
1 small sweet onion, chopped
Handful of kale, roughly chopped
A few ounces of Bourbon BBQ Pulled Pork
A sprinkle of crumbled goat cheese (about 1 oz.)
A drizzle of Tall Guy’s Bourbon BBQ Sauce
Preheat your oven to 400° and wrap your sweet potato in tin foil. Bake for about an hour (depending upon the size of the potato) turning over once in the middle.
In the meantime, heat your olive oil in a pan over medium-high heat. Add your onion and cook until it’s soft and transparent. Add the kale and cook until it’s wilted and soft. Add the pulled pork from the fridge and stir in just until warmed.
Pull your potato out and split it. Top with the onion-kale-pork mixture. Sprinkle with goat cheese and drizzle with Tall Guy’s Bourbon BBQ Sauce. Enjoy!
