08 Jul Recipe for Grilled BBQ Chicken Pizza
Have you tried making a pizza on the grill before? It takes a little practice, but I think it’s well worth the homework. The charred, smokey flavor from the grill adds something extra to the crust and you can use any of your favorite pizza toppings. It takes a bit of patience to get the dough on and off the grill, but I like to remember that grilling is a casual endeavor and nobody is expecting a perfect pie! Don’t be afraid of creating different shapes – I sometimes end up with more of a flatbread than a traditional pizza that you’d expect to find in a delivery box.
If you don’t have a favorite prepared pizza dough or dough recipe, we like the basic recipe from The Joy of Cooking at the Tall Guy house. I add in Italian spices during the mixing process for my own touch. Make sure the dough has fully risen and is at room temperature before preparing the grill. This was a great way to use up some leftover chicken breast from our fridge – if you don’t have any, simply throw a salt and peppered chicken breast on the grill while your dough is rising.
Grilled BBQ Chicken Pizza
- 1 premade pizza dough (or 1 pizza worth of your favorite dough recipe)
- Flour for rolling
- 1 tbsp olive oil
- 1 1/2 cups chopped cooked chicken breast
- 1 cup Tall Guy and a Grill BBQ sauce
- 1/2 medium red onion, sliced thinly
- 2 cups, shredded cheddar cheese
- 4 green onions, chopped
First, prepare all ingredients as the process goes fast once you get going. Mix the chopped chicken breast with 1/2 cup of the Tall Guy and a Grill BBQ sauce. Shred the cheese and slice the onions.
Heat up your grill really hot on one half and low on the other. While warming, roll out your dough to your desired shape and thickness. Lay it on the hot half of the grill for 2 to 4 minutes or until it has grill lines. It will unstick from the grill when it is ready to be flipped over. Pop bubbles if they form.
Flip the dough over and put it on the low heat side (or turn the heat way down if your grill doesn’t allow for two sides.) Brush with olive oil. Then brush with remaining Tall Guy Bourbon BBQ sauce. Top with chicken, red onion and cheddar cheese.
Close the lid and give it several minutes to bake. The pizza is ready when the cheese is melted, but watch the dough. You may need to turn it if the bottom cooks unevenly.
Carefully remove from the lid and top with green onions. Slice and enjoy!
