
15 Apr Recipe for Blueberry Basil Grilled Cheese
It’s National Grilled Cheese Month, and I’m taking full advantage of the opportunity! This week, I tried my own spin on a recipe I’d seen on Pinterest a few times – a blueberry grilled cheese. The flavors in this thing really pop, and it’s something that is a nice change from your typical grilled cheese.
Tall Guy’s Blueberry Basil Grilled Cheese (serves 2)
1/2 pint fresh blueberries
4 tbsp. Oro di Oliva Espresso Balsamic Vinegar
4 tbsp. butter
4 slices Angelic Bakehouse Sprouted 7 Grain Bread
4 oz. Decatur Dairy Basil Farmer’s Cheese, sliced
Put your blueberries and balsamic vinegar in a small sauce pan and heat over medium head. Let them get to a simmer – the blueberries will start to pop and break down into a syrup. Remove from heat after about 5 minutes and let cool and thicken slightly.
Melt your butter in the microwave in a dish large enough to dip the bread slices in. Heat a skillet over medium heat for your sandwich. Dip one side of one bread slice in butter and lay down in the pan. Spread half of the blueberry mixture on the bread slice, and top with half of the cheese slices. Top with the second piece of bread, dipped in butter. If you’ve got a big enough pan, feel free to build and cook both of your sandwiches at once (you’ll have enough berries for two).
Keep in mind – if you want to get the perfect golden crust on your grilled cheese, you’ve got to have an even amount of oil or butter on the bread (hence, my dipping technique rather than spreading) and you want to keep your cooking heat low and slow. I will usually flip my grilled cheese twice to make sure it’s getting the right amount of heat on both sides and that the cheese is melting evenly.
When you’re done, pull that baby off the heat and onto a cutting board to cut in half. The basil farmers cheese is a great melter and makes for stringy, salty deliciousness paired with the sweet and sour combo of the blueberries and balsamic. Although it seems sort of fancy, this is an easy, quick dish! I could also see converting this to a bruschetta recipe…more on that later!
