Mrs. Tall Guy and I took this last weekend off to celebrate our friend’s marriage to a great guy. Congrats Tashia and Chris! It was my only weekend off all summer because we are officially in wedding season! Yes, from showers to bachelor parties to the big event to the boozy gift-opening brunch the next morning, the nuptials of good friends will guarantee party after party where delicious food and drink abound! I get tired just thinking about it. Here is our Recipe for BBQ Chicken Salad!
If you find yourself in charge of a wedding shower, consider this barbeque chicken salad. I use Greek yogurt in place of mayo. Since I also add in a dollop of our bourbon bbq sauce, you can’t tell the difference in taste, but the calories are cut way down. Mrs. Tall Guy tells me that’s important if you have a bridesmaids dress on the horizon.
Your serving options are endless. I typically go traditional and serve the chicken salad on croissants, but whole wheat toast or a lettuce wrap work just as well. Gift your guests options!
The recipe serves eight, but can easily be multiplied or divided.
Healthy BBQ Chicken Salad
- 1 pound cooked chicken, shredded
- 1/2 cup diced red onion
- 3/4 cup diced apple
- 1/2 cup diced celery
- 1/3 cup dried cranberries
- 1/3 cup sliced almonds
- Juice from half a lemon
- 1/2 to 3/4 cup plain Greek yogurt
- 1/3 cup Tall Guy Bourbon BBQ Sauce
- Salt and pepper, to taste
- Croissants, whole wheat bread, or lettuce for serving
Combine all ingredients except the bread and/or lettuce, starting with just 1/2 cup of plain Greek yogurt. If the mix is dry, add more yogurt. Salt and pepper to taste.
Serve on halved croissants, whole wheat toast or in a small ramekin lined with crisp lettuce.
