28 Apr Recipe for Prosciutto Berry and Brie Grilled Cheese
What a fun month of cooking this has been! There’s really nothing like grilled cheese, no matter how simple or fancy you make it. For this last grilled cheese recipe of April, I’ve created something that could pass for breakfast…or dessert! This sandwich has just the right amount of salty balanced with sweet with a rich layer of brie to pull it all together. I hope you enjoy as much as I did! Tall Guy’s Prosciutto Berry & Brie Grilled Cheese (serves 1)
2 Kashi 7 Grain Waffles (find in the freezer section)
2 oz. Brie cheese
3 tbsp. Brennan’s Market Wild Huckleberry Preserves
1 tbsp. coconut oil
Heat the coconut oil over medium heat on the stovetop in a frying pan. If the waffles are frozen, defrost them in the microwave or oven for a few minutes, just to soften. Spread half of the preserves onto one of the waffles and place it preserve side up in the pan. Top with pieces of brie (remove the rind) and prosciutto. Put the remaining preserves on the other waffle and top the sandwich.
Like any grilled cheese, you want to cook this low and slow so that you get a golden crust on the outside and perfectly melted cheese on the inside. This one will take 4-5 minutes per side.
Once you pull it off the heat, cut in half and enjoy the sweet, salty, creamy dream that this sandwich is!
