Last week, the Tall Guy team was honored to host forty food-and-beer-lovers at Westallion Brewing Company in West Allis for our second annual Beer Dinner. We only do a few specialty dinners every year, and boy, does our team love them. The chefs get to be super creative with flavors and pairings, which always pleases our diners. And, we get to collaborate with other amazing local businesses, which is totally our jam.
This year, we executed five beer-inspired courses using locally sourced ingredients. Check out what our team came up with:
Chicken wing over smoked bleu cheese slaw paired with Tall Guy Bourbon Barrel Aged Imperial Stout (bleu cheese sourced from Vern’s Cheese, Chilton, WI)
Salad of spring peas, shaved asparagus, pea shoots, Belivitano cheese, basil, and edible flowers paired with Westallion Pilsner (pea shoots sourced from Big City Greens, Milwaukee, WI; white asparagus sourced from Produce With Purpose, Fond du Lac, WI; edible flowers sourced from Mushroom Mike, Milwaukee, WI)
Oaxacan-style roasted pork tenderloin, mole verde, and smoked sweet potato paired with Westallion Dunkelweisen (sweet potatoes sourced from Produce With Purpose, Fond du Lac, WI)
Venison, curried peanut butter sauce, chana masala, and coconut curried greens paired with Westallion Peanut Butter Porter (kale sourced from Produce With Purpose, Fond du Lac, WI)
Olive oil cake, dulce de leche with smoked sea salt paired with Westallion Eggnog White Stout (olive oil sourced from Oro di Oliva, Milwaukee, WI; edible flowers sourced from Mushroom Mike, Milwaukee, WI)
