If you have vegan friends attending your party, then these sweet potato bites are a must! They don’t take much work in the kitchen and come in a festive red and green, so they decorate the table quite nicely. Here is our Recipe for Sweet Potato Bites!
Of course these appetizers taste best warm, but hold up surprisingly well at room temperature. This recipe easily can be halved or doubled depending on the size of your party.
Sweet Potato and Avocado Bites
Ingredients
- 2 medium sweet potatoes, scrubbed and sliced into 1/4″ pieces
- 1 tsp taco seasoning
- 1 1/2 tsps olive oil
- Salt and pepper, to taste
- 2 large avocados, pitted
- 1/4 cup lime juice
- 10 cherry tomatoes, cut in half
- Small bunch of cilantro
Instructions
Preheat oven to 400º.
Cover a baking sheet in cooking spray. Place the potatoes, taco seasoning, olive oil, and salt and pepper on the baking sheet and toss to coat.
Put baking sheet in oven and bake for 15 minutes or until soft.
Meanwhile, scoop the flesh of the avocado into a medium bowl. Add 1/2 tsp of salt and a tbsp of lime juice. Mash together with a back of a fork. Add more lime juice if guacamole is too dry.
Top each the potato slice with a dollop of avocado mix, one tomato half, and a spring of cilantro. Place on serving platter.
