Simple Summer Salmon Recipe

Do you think that because we live in a climate where winter can be so harsh, we appreciate summer that much more? I am sure loving the weather, and dedicated to spending as much time outdoors as possible! Which means the less time I spend on dinner, and the more time I spend in the yard, the better.

Here’s an easy anytime recipe that uses only one pan and takes less than 30 minutes to prepare. It’s healthy, and Paleo diet friendly. It uses “Magic Unicorn Salt” which is one of our favorites – so much so that Mrs. TG insisted we sell it at Tall Guy and a Grill! So if you’re in need, stop in sometime and grab a tin.

Simple Summer Salmon: 

1 bunch asparagus

1 TBSP butter

Salt & Pepper to taste

2 salmon filets (I made 3 so we’d have leftovers)

1 large lemon

Beautiful Briny Sea “Magic Unicorn” salt

1. Preheat oven to 350 degrees. Melt butter in a large, oven-safe pan over medium-high heat. Once melted, add asparagus and sprinkle with salt and pepper. Sautee for about 5 minutes.

2. Slice the lemon and place slices on top of asparagus in pan. Season your salmon filets by rubbing Magic Unicorn salt over the top (use sparingly, as this is very salty!) Place salmon filets on top of lemon slices. Remove from stovetop and place in oven. Bake for apx. 15 minutes or until salmon flakes easily.

Plate your salmon and asparagus and use the lemon slices for garnish. Serve with a summer salad, and you’re all set to sit in the yard and enjoy the weather! Bon appetite!
