Salad 101: How to Dress Up Your Boring Greens

As it is the start to a new year, I’m trying – like many of you – to keep it healthy.  Recently, I rediscovered some Tall Guy salad recipes that are packed with flavor and nutritious ingredients.  If you’re in need of some low-cal, yet delicious ways to dress-up a boring salad, here are a few of my favorites.

Ensalada Verde

Ensalada VerdeLoaded with fresh tomatoes, red onions, avocado, and citrus vinaigrette – the combination of these ingredients taste amazing and feel right for my body.  The citrus vinaigrette will also make you forget about your typical go-to salad dressings, like Ranch, French, and Thousand Islands (which are generally loaded with unhealthy calories).

Aside from taste, the best part about the Ensalada Verde is that it is super simple to make.

Tall Guy Ensalada Verde (serves 2)

3 – 4 c. of chopped romaine lettuce

1 chopped avocado

1 chopped tomato

½ chopped red onion

Citrus Vinaigrette


Make your own vinaigrette with vinegar, oil, salt & pepper


Berry Salad

Berry SaladCheck out this power salad (part of our lunch menu).  On a bed of organic mixed greens – and I mean real greens – no iceberg lettuce, please – add blueberries, strawberries, goat cheese, walnuts, and your choice of vinaigrette.

Raw blueberries contain some of the highest amounts of antioxidants and pair perfectly with plump, red strawberries, which are known for their source of vitamin C, potassium, and fiber.   Though goat cheese is the fattiest part of this salad, it is a creamy must-have-perk that is easier on your digestive system than most cheeses (and fairly low in calories).  Should you want an extra crunch in your berry bite, I suggest heart-healthy walnuts.

Berry Salad

3 – 4 cups of organic mixed greens

1 c. of freshly cut strawberries

1 c. of fresh blueberries

1/4 c. of goat cheese crumbles

Choice of Balsamic or Raspberry Vinaigrette


Tropical Chicken Salad

Tropical Chicken SaladI like to add a little more protein to my greens from time to time.  Chicken is a lean meat, so, despite the additional calories in the Tropical Chicken Salad you can still bank on ingredients that are healthy for you.  This is also one of my favorite salads as it was inspired by the season of summer and an interest in how to use exotic fruits, like mangos & kiwis, and sunflower shoots.

Tall Guy Tropical Chicken Salad (serves 2)

1 can chunk chicken

1/3 c. mayonnaise

1 mango, chopped

1 kiwi, sliced

¼ c. unsweetened  grated coconut

3 tsp. slivered almonds

1 tsp. Asian Seasoning blend

Salt & Pepper

½ c. sunflower shoots

2 – 4 c. baby spinach


Eating healthy isn’t always about choosing a boring salad over a juicy burger.  To me, it is about making something healthy, like a boring salad, more irresistible than that juicy burger. Hope you enjoyed these salad recipes!
