I can’t resist breaking the grill out any night possible in the summer! Luckily we beat the rain last night and got this feast on the table. This recipe is an effort to keep it a little bit healthy, and 100% delicious! Here is our Recipe for Bacon Wrapped Shrimp Salad!
1 lb. large shrimp, cooked
1 lb. bacon
4 oz. sun dried tomatoes in oil
1 red onion
Lettuce/your favorite salad greens
4 tbsp. olive oil
4 tbsp. Oro di Oliva oregano white balsamic vinegar
Salt & pepper to taste
Soak approximately seven wooden skewers in water for a few hours. Take the tails off of your shrimp. Cut your onion into chunks large enough to skewer. Cut each slice of bacon in half. Wrap one shrimp in 1/2 slice bacon and skewer; follow with an onion chunk. Repeat until you’ve skewered all of your shrimp and onions.
Preheat your grill to a medium low heat and put skewers on. Rotate them every 5 minutes or so. It will take about 20-30 minutes to get the bacon crispy.
In the meantime, put salad greens on plates. Put 1/2 of an avocado on each serving, as well as 1 oz. sun dried tomatoes. Top each salad with 6 bacon-wrapped shrimp and roasted onions. Drizzle 1 tbsp. oil and 1 tbsp. vinegar on each salad, and sprinkle with salt and pepper (to taste).
