Recipe for Pulled Pork, Apple and Onion Quesadilla

After I made my Bourbon BBQ Pulled Pork last week, I decided I should get creative with how to use it up instead of make the same thing every day. This is a delicious recipe using things I had in the house waiting for me! Makes an easy, fast weeknight meal if you spent the time on Sunday to make my Bourbon BBQ Pulled Pork!

 

Tall Guy Pulled Pork, Apple & Onion Quesadilla

1 onion (whatever you’ve got in the house – I used a small sweet onion)

1 apple (again, whatever you’ve got – I used a small gala apple)

Leftover Bourbon BBQ Pulled Pork

2 large tortillas

1/2 c. shredded sharp cheddar cheese

Olive Oil cooking spray

Spray a large pan with cooking spray and heat to medium-high on oven. Chop your onion and apple to whatever size you like and sauté until soft and the onion is translucent.

 

Empty the onion and apple into a dish and put pan back on the hot stove. Spray it again with cooking spray.

Put one tortilla down on bottom of pan. Top with a layer of cheese (1/4 c.), a layer of your leftover pulled pork, and your sautéed onion and apple. Top with the remaining 1/4 c. of cheese and the second tortilla.

 

Keep a close watch on this, as you don’t want to burn the tortilla. I’d say it will take about 3-4 minutes per side depending upon your temperature. You can peek underneath as it starts to cook to see how the bottom is doing, and make sure the cheese is melting. Flip it once to get it crispy on both sides, and you’re done!

I like to cut mine with a pizza cutter and top it with some Tall Guy Bourbon BBQ Sauce. Enjoy!
