Recipe for Afro Fusion Cuisine Jerk Sauce Salad

So a few weeks ago we gave a shout out to Afro Fusion Cuisine for being a great local brand with quality food products that we endorse. I thought I’d share with you all how I like to use my favorite Afro Fusion product: Mama Deacon Original Jerk BBQ Sauce. We still have time for some fresh summer salads, right? This one’s a favorite:

Recipe for Afro Fusion Cuisine Jerk Sauce Salad

Jerk Chicken & Corn Salad (serves 1)

1 chicken breast

1-2 c. salad greens (I used baby arugula & Central Greens micro greens)

1/4 c. chickpeas, drained & rinsed

1 ear of corn, cooked & cut off the cob

2 tbs. feta cheese

1 lime

2-3 tbsp. Mama Deacon Original Jerk BBQ Sauce

1 tbsp. olive oil

Marinade your chicken in 2 tbsp. jerk sauce for a few hours or overnight. Heat a grill pan or your grill (mine happened to run out of gas this day) to medium-high heat. Put your chicken on for about 2 minutes per side.

In the meantime, build your salad with greens, chickpeas, corn & feta. When the chicken comes off the grill, let it sit for just a minute or two before you slice it (keeps the juices in). Add the chicken to the top of your salad.

In a small bowl, whisk together the juice from the lime, 1 tbsp. oil, and 1 tbsp. jerk sauce. Dress your salad with this. It’s so good. I can’t even describe how good. And a great way to use up that leftover corn that is so abundant right now. Enjoy our Recipe for Afro Fusion Cuisine Jerk Sauce Salad!
