Neuske’s Bacon Wrapped Brussel Sprouts
People who don’t like brussel sprouts really like this new menu item…because…Nueske’s bacon. These bacon wrapped brussels are also coated in Wisconsin maple syrup, which creates the perfect sweet & salty balance in each bite. Also note that this passed app is one of our top sellers, so you’ll want it at your next event.
Wisconsin Napolean Skewers
These Tall Guy skewers feature 100% locally-sourced bread cheese from Carr Valley, smoked knackwurst from Usinger’s, and seasoned fingerling potatoes from Alsum Farms. It’s our take on traditional skewered appetizers that you’d normally see at weddings and other private parties, only better.
Zesty Citrus Salad
Fresh greens. Zesty citrus vinaigrette. House pickled red onions. Orange segments. Spiced almonds from Treat Bake Shop. Chef Dana knows what she’s doing. It’s a simple, incredible concoction that makes for a non-boring vegetarian entree and/or side at your next corporate event, wedding, or private party.
Potato Gratin with 3 Cheese Mornay Sauce
Here’s another Tall Guy twist on a traditional dish. Made with Wisconsin cheeses and house toasted breadcrumbs, our Potato Gratin is creamy, cheesy, and seasoned to perfection. This new recipe is a guaranteed pleaser for any style of event.
Pretzel Crusted Chicken Bites with Mustard
We’ve already added this new staff favorite to a number of wedding menus in 2017 – 2018. First, we smash up smoky flavored pretzels from Addicting Pretzels and use the crumbs to coat vegetarian-fed free range chicken breast. We then add a glaze of stone ground mustard (with a side of dipping sauce) from Mustard Girl. Need I say more?
Green Bean Almondine
This new recipe also calls for spiced almonds from Treat Bake Shop, which gives every bite a really nice crunch. We also add red Peppadew Peppers to our fresh green beans for pop of color and an additional burst of flavor.
Shrimp Ceviche with Housemade Won Ton Chips
My personal favorite from our new menu is easily the Shrimp Ceviche, made with citrus juice, zest, and tobiko. This seems a little counter intuitive since I grew up on Italian food, but it’s so light and fresh (and I could eat our fried won ton chips all day). If you’re looking to have our ceviche at your next party, we can serve this passed app on a won ton chip or cater it family style.
Lastly, our clients expect us to have a lot of different choices on our menu – especially our corporate clientele. Aside from variety, we’ve also taken time to explore new flavors with your taste buds in mind.
