09 Dec Recipe for Healthy Seven-Layer Dip
It’s hard to stay fit and eat healthy during the holidays, but this healthy seven-layer dip might be one small way to decrease the impact of all of the indulgences. Take it to your neighborhood’s cocktail potluck party so you know there is at least one thing that won’t leave you feeling guilty. (But then also try the other stuff. We don’t want tasty food to go to waste!)
This colorful dip is full of Mediterranean diet ingredients such as hummus, cucumbers, and olives. It’s great served with pita chips, crackers, or sliced fresh veggies. If possible, don’t assemble more than four hours before serving so the flavors and colors stay fresh. Here is our Recipe for Healthy Seven-Layer Dip!
Healthy Seven-Layer Dip
- 8 oz. plain hummus
- 1/2 cup nonfat Greek yogurt, plain
- 1/8 tsp salt
- 1/4 tsp paprika
- 1 tomato, diced
- 1/2 cup diced cucumber
- 2 canned artichoke hearts, chopped
- 2 roasted red peppers, diced
- 1/4 cup crumbled feta cheese
- Kalamata olives, chopped (optional)
Spread the hummus evenly over the bottom of a square 8″ X 8″ serving dish. Delicately dollop yogurt over hummus and carefully spread with a spatula. Sprinkle the yogurt with salt and paprika. Layer the tomatoes and cucumbers next. Follow with artichoke hearts, roasted red peppers and feta cheese.
Keep in fridge until serving. Top with optional chopped Kalamata olives right before serving.
Serve with pita chips, crackers or sliced fresh veggies.
