Here’s a hearty but light appetizer that is great for a holiday brunch or even a snack while you’re trimming the tree! My chicken salad apple slider is going to become on of your favorites, year round!
Packed with chicken, grapes, and gorgonzola cheese, these are actually really filling and don’t feel quite as guilt-filled as the rest of the holiday treats!
I love the crisp, tart flavor of granny smith apples, but you could use whatever your favorite is.
Chicken Salad Apple Sliders
- 3-12.5 oz. cans chicken, drained
- 5 oz. gorgonzola cheese
- 1 c. red grapes, halved
- 1 c. pecans, chopped
- 1/4 c. sour cream
- 1 c. mayo
- 1 bunch green onions, chopped (just white part)
- 3 granny smith apples
- 20-24 whole pecans for garnish
Combine the first seven ingredients a a mixing bowl.
Thinly slice apples and remove seeds. Place a large scoop of chicken salad on each apple slice and top with a pecan.
This is also really good with raisins or dried cranberries instead of the grapes!
