Easy Brunch Recipe Planning

Easy Brunch Recipe Planning

This weekend the Tall Guy has lots of business to attend to, and I have the house to myself Saturday. What better time to have some friends over for brunch? Here is what is on the menu. What are your favorite brunch go-to recipes? Please share!

Rustic Twice-Baked Potato Casserole

This dish can be made ahead of time (even the night before) and thrown in the oven prior to guests’ arrival. Pull it out of the oven and serve!

Bacon Egg and Cheese Ring

I made this for a past brunch and everyone asked for the recipe. Crescent rolls, eggs, bacon and cheese. So easy! You can modify this one pretty easily-change the bacon to ham, Canadian bacon, or sausage. Or to make it vegetarian take out the meat and add sauteed mushrooms and peppers. Yum.
Honey Lime Fruit Salad

There has to be something solidly healthy in this list! A simple, tasty fruit salad. I omit the grapes and just toss strawberries, mandarins, kiwis and (fresh) pineapple chunks.
Baked French Toast with Maple & Praline

Of course I put the calorie bomb AFTER the fruit:) This bad boy has two cups of half and half and two sticks of butter in it. So you know it will taste amazing.
Merry Mimosas

Call me crazy, but I’m not a bloody mary fan. Give me a good old mimosa any day. This one adds a little cranberry juice to the classic cocktail. Add some pretty garnishes to dress it up!
Happy Weekend everyone! Hope you enjoy these tasty brunch recipes!
